High Protein Brownie 'Cake' with Coconut Ice Cream

We love Hollywood Homestead's huge array of perfectly paleo deserts, and customized this one to turn your protein paleo brownie into a gourmet dinner party centerpiece.

What you will need for the Coconut Ice Cream:

  • An ice cream maker (we like this model)
  • 2 eggs
  • 1 teaspoon vanilla
  • 800 ml Organic Coconut Milk
  • 1/2 cup of organic maple syrup

Directions:

  1. Mix the coconut milk, eggs, vanilla and maple syrup  in a bowl or blender for approximately 2 minutes or until blended well.
  2. Pour the contents into your ice cream maker, and turn on for 20 minutes.
  3. Turn off and empty contents into an airtight container and place back in the freezer for approximately 3 hours.
  4. Set aside.
What you will need to plate:
  • Fresh mint leaves for garnish
  • Berry compote (if desired)
  • Paleo Powdered Sugar -- learn how at Skinny Ms. here (if desired)
  • 2 Paleo Brownies -- warmed

Directions for plating:

  1. Cut the Paleo brownies diagonally to create triangles.
  2. Plate one triangle brownie with a scoop of coconut ice cream.
  3. Top with mint, berry compote and paleo powdered sugar.
  4. Enjoy!
